From the field to the glass
The high-quality organic vegetables from the Fermentarium field are the main ingredients of my creations.
I am very lucky that the healthy products from the field go straight to me for processing. That is my greatest interest. ... that I can take the amounts that I need for the mixtures and where I have the feeling that the production feels harmonious.
It's like an artistic process. I can work like a painter or a choreographer. I empathize and determine each time anew which available vegetables are allowed to dance and whether there are any that can do a solo.
This is a thoroughly nourishing creative process for me. I'm fine with it.
